How Many Kg Potatoes Are Required for 1 Kg Chips?

🔶 How Many Potatoes Are Needed for 1 Kg of Chips? To produce 1 kg of potato chips , you typically need: 👉 4 to 5 kg of raw potatoes. This is because chips processing involves very high moisture loss during frying. 🔶 Why Do Chips Require More Potatoes? Unlike French fries, chips are thinly sliced, which leads to higher weight loss during processing due to: Peeling removes the outer skin. Slicing creates thin wafers. Frying removes a large amount of moisture. 👉 Final recovery is usually only 20–25%. 🔶 Step-by-Step Processing Loss From 5 kg of raw potatoes: 10–15% is lost during peeling. A further 5–8% is lost during slicing and trimming. During frying, moisture loss can reach 60–70% . 👉 Result: About 1 kg of finished potato chips. 🔶 What are the Key Factors Affecting Chips Yield? 1. Dry Matter Content Potatoes with higher dry matter provide: Better recovery. Crispier chips. 👉 Ideal range: 22–25%. 2. Sugar Content Low sugar is essential for good-quality chips. 👉 High sugar leads to: Dark colour. Burnt chips. 3. Potato Size & Quality Medium-sized, uniform potatoes provide better slicing efficiency. Damaged potatoes increase wastage. 🔶 Summary If a processor wants to produce: 👉 10 tons of potato chips They will require: 👉 40–50 tons of potatoes. 🔶 Business Insight 💡 Higher dry matter = Lower oil usage. Better quality potatoes = Higher recovery. 👉 This directly improves profit margins. 🔶 PB Insight / Learning Chips processing is highly dependent on raw material quality.
